Ways you can spice up your vegan meals

Being a vegan can be challenging at times because you are looking for ways to make your meals more interesting. One idea is to add bold spices and marinades to the foods you prepare. Look at vegan recipes online and talk to friends who are vegan to get fresh meal ideas.

Vegan pound cake

To make this cake, preheat the oven to 350 degrees. Meanwhile mix two cups of cake flour, three teaspoons of baking soda and a few teaspoons of salt. In another bowl combine a cup of maple syrup, 16 ounces of tofu and three teaspoons of almond extract. Stir this mixture in with the flour mixture and pour in a greased bake pan. Bake for 30 minutes.

Quinoa and fruit bake

This makes for an excellent breakfast for vegans. Cook the quinoa according to package directions then pour in a greased pan. Add two cups each of dried fruits and almonds then add a half cup of almond milk along with some vanilla extract. Bake in a 350 degree preheated oven for 20 minutes then serve.

Spaghetti and root vegetables with carrot puree

Boil a pound of spaghetti in a medium pot and cook until tender yet slightly firm. Drain and pour in a large bowl. Then add three cups of shredded root vegetables such as carrots and squash. Add a third cup of vegetable broth, a cup of diced onions, two crushed garlic cloves and a half cup of carrot puree. Mix well and serve.

Baked bananas with cane syrup

Preheat the oven to 350 degrees. On a greased sheet pan place banana slices and drizzle cane syrup over them. Sprinkle cinnamon and chili powder over the bananas before baking in the oven for 15 minutes.

Black and red bean salad

In a medium bowl combine two cans each of black and red beans, a half cup of diced red onions, a cup of diced tomatoes, a cup of green peas and a half cup of spinach. Add spices such as cayenne pepper, salt and garlic powder along with some jalapenos. Drizzle olive oil in the salad, toss and serve.

Avocado and tomato sandwiches

On one slice of bread put a few teaspoons of vegan mayonnaise, three avocado slices and two tomato slices. Sprinkle salt and pepper over the avocado slices and tomatoes then top with second slice of bread. Cut in half and serve.

Fruit and ginger salad

In a medium bowl combine three cups of diced fruit, a half cup of finely minced ginger, a third cup of ginger tea, an eighth cup of sliced almonds and a few teaspoons of lemon juice. Mix well and serve.

Vegetable soup with hot chiles

In a large pot saute two cups of diced red onions, a half cup of diced celery and two cups of diced carrots in olive oil. Then pour four cups of vegetable broth and add other favorite vegetables. Add your favorite spices and a third cup of minced hot chiles. Cook over medium low heat for 45 minutes. These meal ideas should keep your food choices interesting.
